Cilantro Mango Dressing

Cilantro Mango Dressing is a refreshing dressing made with mango, olive oil, lime juice, cilantro, and jalapeno for a spicy kick. Blend it all together to make a healthy salad dressing that’s perfect for topping your favorite salad or use as a dipping sauce.

Equipment

  • Food processor or blender

Ingredients

  • 1 large mango, diced
  • 1/2 cup olive oil
  • 1/4 cup fresh lime juice
  • 1/3 cup cilantro, roughly chopped
  • 1/2 1/2 jalapeño, deseeded and roughly chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  • Dice the mango into chunks. Juice lime. Rough chop cilantro. Deseed and roughly chop the jalapeno.
  • Add all of the ingredients to a blender or food processor except the olive oil. Pulse the ingredients until a puree starts to form.
  • Turn up to medium and slowly drizzle in the olive oil until a smooth and creamy dressing is formed.
