Cilantro Mango Dressing
Cilantro Mango Dressing is a refreshing dressing made with mango, olive oil, lime juice, cilantro, and jalapeno for a spicy kick. Blend it all together to make a healthy salad dressing that’s perfect for topping your favorite salad or use as a dipping sauce.

- 1 large mango, diced
- 1/2 cup olive oil
- 1/4 cup fresh lime juice
- 1/3 cup cilantro, roughly chopped
- 1/2 1/2 jalapeño, deseeded and roughly chopped
- Salt, to taste
- Pepper, to taste
Dice the mango into chunks. Juice lime. Rough chop cilantro. Deseed and roughly chop the jalapeno.
Add all of the ingredients to a blender or food processor except the olive oil. Pulse the ingredients until a puree starts to form.
Turn up to medium and slowly drizzle in the olive oil until a smooth and creamy dressing is formed.
