Sous vide is French for “under vacuum”. It refers to the process of vacuuming out air then sealing food in a bag, then cooking in a water bath set at a very specific temperature.

How to make a citrus zest sous vide chicken breast:
- Place chicken and 1-2 tablespoons of The New Primal Citrus Zest dressing in a bag. If using a vacuum sealer. Hang the bag off the side of the counter to prevent the dressing from preventing a seal.
- Let marinate for 2 to 24 hours.
- Cook chicken sous vide for 2 hours at 140℉.
